Mix garlic, salt, and Italian seasonings in a bowl and cover the roast with this mixture.
Place the roast on the center rack in the oven and cook at 450°F (232°C) for 15 minutes.
Reduce the temperature to 325°F (163°C) and continue roasting for about 20 minutes per pound, or until desired doneness is reached using a digital thermometer:
110°F - 115°F (43–46°C) for rare
120°F - 125°F (49–52°C) for medium-rare to medium
130°F - 135°F (54–57°C) for well-done
Transfer the roast to a cooling rack or cutting board, tent with foil, and let it rest for 15-30 minutes.
